Remember during the pandemic when we all stayed home and baked, cooked, and created? I really miss that time. But one of the greatest things it taught us was that you don’t need to waste brown bananas. Make yourself some delicious banana bread instead! Or muffins! Another thing I like to do is peel the very ripe bananas, wrap them …
A Life Update: Cultivating Peace in Times of Uncertainty
Well hello there! It’s been a long time since I’ve written here, and I miss sharing posts and recipes with you. It’s been a weird couple of years—or if I’m being honest, four years, starting in 2019 when I got a seriously bad concussion—through the pandemic and adjusting to life afterward. I think a lot of us have been on …
Gluten Free Red Velvet Cupcakes with Goat Cheese Frosting
It’s Valentine’s Day tomorrow and these are the perfect dessert to celebrate with! They also make great birthday cupcakes, or a festive Christmas Cake. I know it’s only February and it’s hard to think about Christmas, but you know, always good to be prepared… I know people complain about long blog posts before the recipes and want to just get …
Green Bean Casserole – Gluten & Dairy Free
One of the best holiday side dishes ever, GREEN BEAN CASSEROLE! But make it gluten AND dairy free! I first wrote this recipe about 4 years ago, and the photos were horrible and the recipe needed some tweaking. I’m bringing you the updated version, but copying the blurb I wrote, because I just love sharing a bit about how the …
Finding My Voice in a Loud World
Anyone who spends time on social media knows that it is a loud echo chamber of all the things at once. Activism, yes/no lists, travel lust, food pics galore, nutrition information and disinformation for every diet under the sun, good news, bad news, false news, good people and some very mean people. Depending on who you follow, one person may …
Restaurant Style Caesar Salad
Thick and creamy Caesar Salad is not just something that you can only enjoy at a restaurant any more! This recipe has it all, creamy dressing (dairy free), crunchy croutons, crisp lettuce and the perfect amount of cheese on top. I use pecorino romano, which is sheep milk cheese and can sometimes be tolerated by people who can’t have cow milk. You can also use parmesan, which is more traditional. This is a great side salad to eat with Steak, Chicken, Salmon, etc. You can also add grilled chicken to it for a chicken Caesar Salad!
Grow Broccoli Sprouts at Home – SUPER EASY!
Coming at you from almost 5 weeks in quarantine and day 17 of official statewide lock down/ stay at home orders! I hope everyone is hanging in there and finding creative things to do both in the kitchen and to keep yourself entertained. I’ve been talking about sharing this “recipe” for months, and it is finally time now that we …
5 Easy Tips For A Healthier Lifestyle
Happy New Year! Here we are, over halfway through January! How are those resolutions going? I have a strong love-hate relationship with resolutions. First, because I think that change can happen at any time. Second, I think our resolutions are typically too broad to ensure success. For example, a resolution may be to eat healthy and exercise. This is a …
Safer Sunscreen 101
Happy National Sunscreen Day! Sunscreen is one of the most commonly used personal care products, and not just in the summer months. Most women look for facial moisturizers or foundations that also include SPF because we want to help slow the development of wrinkles and dark spots on our face. For everyone else, we slather it on most of our …
Staying Healthy on Summer Adventures
Summer is not over yet! If you are like me, summer means taking as many adventures as possible whether they are hours away or close to home. Road trips, camping, hiking, and going to the lake are all my favorite things to do during the summer. Even though summer makes me feel lazy when it comes to cooking, eating healthy …
