Cookies are one of the best and easiest sweet treats ever. Especially when they are fresh out of the oven. Mmm. Are you drooling yet?

It’s been quite a journey trying to find the best gluten and dairy free cookie recipe. I’ve tried A LOT of cookies (what a rough life) and most of them leave something to be desired. Usually the problem is with the consistency. They are too dry, too oily, too nutty, taste like cardboard, etc.

THESE COOKIES HOWEVER, ARE THE BEST ONES I’VE EVER TRIED.

You know what they say… when all else fails just make up your own recipe! So that’s what I did.

The best part is they are pretty easy to modify. You can make them big or bite size, keep them a little chewy on the inside or bake them until they are brown and crispy. This cookie recipe really is the ultimate choose your own adventure.

I made a variation of these cookies as well where I did a little less almond flour and subbed in some ground flax seed which also turned out awesome. I got the idea from my new mama friend because she loves these cookies and flax seed can naturally help support lactation. Flax seed can also help in general with hormone balance, blood sugar regulation, digestion, clear skin and are also a source of anti-inflammatory omega-3 fat. I think both cookie recipes are awesome, but if you’re looking for some extra healthy fats and hormone balance I highly recommend adding the flax seed.

I don’t know about you but I love baking on the weekends. Especially Sunday afternoon to cure those Sunday night blues about having to go back to work in the morning. So go make these cookies and make the best out of the rest of your weekend!!

 

Legit Gluten Free Chocolate Chip Cookies

THE BEST gluten free chocolate chip cookie recipe EVER. These can also be made for lactation support for breast feeding mothers.

Ingredients

Dry Ingredients

  • 2 1/4 Cups Almond Flour *decrease to 2 cups if adding flax seed
  • 1/4 Cup Tapioca Flour
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Fine Sea Salt
  • 1 Cup Dark Chocolate Chips Enjoy life Brand for dairy free
  • 1/4 Cup Ground Flax Seed *for lactation support

Wet Ingredients

  • 1/2 Cup Avocado oil or Olive oil
  • 1/2 Cup Maple Syrup
  • 2 Tablespoons Vanilla Extract

Optional

  • 1/4 Cup Ground Flax Seed

Instructions

  1. Preheat the oven to 350 degrees and line a large baking sheet with parchment paper.

  2. Mix together dry ingredients in a bowl or stand mixer. In another bowl, mix the wet ingredients.

  3. While stirring combine the wet ingredients with the dry. Once mixed, add the chocolate chips.

  4. Using an ice cream or cookie scooper place them about 1.5 inches apart- depending on the size you prefer you can make 12 large cookies or about 20 smaller bite size cookies. Bake for 15 minutes for brown but still chewy cookies.

  5. Enjoy fresh out of the oven because that's when they are the best!! But, if you want to keep some around (esp for nursing mamas) you can freeze them too!
