Remember during the pandemic when we all stayed home and baked, cooked, and created? I really miss that time. But one of the greatest things it taught us was that you don’t need to waste brown bananas. Make yourself some delicious banana bread instead! Or muffins! Another thing I like to do is peel the very ripe bananas, wrap them in a bit of parchment paper, and put them in a ziplock in the freezer to throw into smoothies.

For those of you who have come here and are not gluten-free, don’t worry. I have used a one-to-one ratio type of gluten-free all-purpose flour (sorry, that was a lot of hyphens), which means it swaps perfectly for the gluten counterpart. My favorite brand is King Arthur, but there are others by companies like Bob’s Red Mill and Krusteaz.

I don’t know what it is about bananas, but every time I buy them, I can never eat them in time. Maybe it’s because I buy them at Costco? I don’t know. I’d never utter a bad word about my favorite place on earth, so it’s got to be my fault, not Costco’s.

Anyway, this recipe is true to its name. It couldn’t be any easier. Mix everything, pour into a loaf pan, and bake! Also, I know people are particular about things like banana bread. Mine doesn’t have nuts, but it does have chocolate chips. Don’t like chocolate chips? That’s totally cool. Take them out. Put in some nuts. Add in whatever your heart desires. Except for more liquid or flour—that would ruin the consistency. Otherwise, choose your banana bread adventure. Enjoy!

Easy Gluten-Free Banana Bread

Ingredients

  • 4 ripe bananas
  • 1/3 cup melted ghee, butter, or coconut oil
  • 1 tsp baking soda
  • 1 pinch salt
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1 tsp cinnamon
  • 2 tsp vanilla
  • 2 cups gluten-free all-purpose flour *You can sub 2 cups of normal all-purpose flour.
  • 1/2 cup chocolate chips

Instructions

  1. Pre-heat the oven to 350 and line a loaf pan with parchment paper.

  2. In your KitchenAid or mixing bowl mash the bananas and mix in the butter and sugar.

  3. Add in the eggs and mix until combined.

  4. Add vanilla, baking soda, and salt, mix well.

  5. Pour in the flour slowly while mixing to prevent clumps.

  6. Once the batter is mixed well, stir in the chocolate chips.

  7. Bake for 45 minutes or until a toothpick comes out clean and the top is slightly browned. Slice and enjoy.
