Easy Gluten-Free Banana Bread

Do you have brown bananas? Don't throw them out! Make this super easy banana bread for a special treat instead.

Ingredients

  • 4 ripe bananas
  • 1/3 cup melted ghee, butter, or coconut oil
  • 1 tsp baking soda
  • 1 pinch salt
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1 tsp cinnamon
  • 2 tsp vanilla
  • 2 cups gluten-free all-purpose flour *You can sub 2 cups of normal all-purpose flour.
  • 1/2 cup chocolate chips

Instructions

  1. Pre-heat the oven to 350 and line a loaf pan with parchment paper.

  2. In your KitchenAid or mixing bowl mash the bananas and mix in the butter and sugar.

  3. Add in the eggs and mix until combined.

  4. Add vanilla, baking soda, and salt, mix well.

  5. Pour in the flour slowly while mixing to prevent clumps.

  6. Once the batter is mixed well, stir in the chocolate chips.

  7. Bake for 45 minutes or until a toothpick comes out clean and the top is slightly browned. Slice and enjoy.
