Balsamic Watermelon Salad

There’s been so much that I want to say this summer and especially in the last month, but I have just been wanting to hold onto all of the moments for awhile before blogging about them. This summer went by in such a whirlwind that I barley had time to thinkĀ about all the recipes I wanted to create and all the blog posts I wanted to write. But you know what! I’m back now and I’m ready to rockĀ it, because as much as I love summer… I am obsessed with all things fall!

Before we get into fall and everything pumpkin I wanted to close out summer with a fresh, summer salad. The weather is still relatively warm here in Colorado but I can tell that it’s not going to last long! This watermelon salad will use up that watermelon you bought for Labor Day (or maybe before, who am I to judge) that you haven’t used yet. Or it will just give you an excuse to eat one last beautiful, juicy watermelon!

I’m still having a hard time wrapping my head around the fact that it’s SEPTEMBER. But, once I get my head around that I’ll be doing a Wedding & Honeymoon recap. We got our wedding pictures back and they are OUT OF THIS WORLD. It’s going to be hard for me to only pick a few for a blog post.

Balsamic Watermelon Salad

Total Time 5 minutes
Servings 4 people

Ingredients

  • 1 Personal sized/ mini watermelon
  • 1 large Shallot, sliced thinly (about 1/4 cup)
  • 1 tablespoon Basil, julienned into strips
  • 1 TBSP Balsamic Vinegar
  • 4 oz Plain goat cheese
  • 1 pinch Coarse sea salt

Instructions

  1. Cut the watermelon into 1/2 inch cubes or use a melon baller.
  2. Add the sliced shallots, balsamic vinegar and basil to the watermelon and mix well. Top with goat cheese and serve!
