In case anyone is concerned, I survived my Bachelorette weekend over Memorial day! I realize I have been MIA since then, but don’t fear I am alive and well. It took me a few days to get over the champagne hangover but I have recovered. To say the most cliche thing possible, it was the most incredible weekend I could’ve ever asked for! I wish I could relive it again and again…

As I’m sure you’re also wondering my fiance Wes and I are getting married on August 12. We have also been together for almost 7 years already but are excited for this next chapter of life. We just hit the 2 month countdown mark yesterday and I couldn’t be more excited! I know it will come fast, especially since we leave tomorrow (Friday) for our annual week long Lake Powell Trip! I am trying to stay regular with posting and recipes, but as the summer gets busier I find myself spending more time outside than in the kitchen, so if you miss me for a week here and there don’t worry, I’m busy coming up with great stuff for you!

This recipe is one of my favorite side dishes because it’s the laziest recipe ever. Summer makes me LAZY in the kitchen, the warm weather makes me want to just sit on my front porch with a cold drink (alcoholic or otherwise) and just enjoy being outside. When summer first hits I experience an extreme lack of motivation to cook, which is what has been plaguing me the last couple of weeks. So this is for you lazy summer cooks out there! You know you still need to eat healthy but just feel like you can’t, I promise this recipe is for you. Pair it with some chicken and it’s an easy, flavorful meal perfect for a weeknight or lazy weekend dinner.

As far as I’m concerned it’s better to spend your time outside if you can, so get out there! Go for a walk, get yourself some vitamin D, move any way you can and enjoy summertime. It is fleeting, every year I wish summer would last longer and then I spend my time aching for it to come back…so get out there and live it up!

Lazy Summer Squash

A great vegetable side dish when it's sunny outside and you don't want to spend your time sweating over the stove.

Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes
Servings 2 people

Ingredients

  • 1 Yellow Squash, sliced into half moons
  • 1 Zucchini, sliced into half moons
  • 3 Shallots, sliced
  • 1 Red bell pepper, sliced
  • 1-2 teaspoons Fine sea salt divided
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Rosemary powder, or 1 teaspoon rosemary leaves
  • 1/4 Lemon, juiced- about 1 teaspoon
  • 1 tablespoon Coconut oil or other cooking fat

Instructions

  1. Chop all vegetables! Heat a skillet on medium high heat, once hot add coconut oil and melt completely. Add shallots and sprinkle with salt. Cook for 2 minutes.
  2. Add bell pepper and squash. Cook for 10 minutes uncovered and stirring occasionally. Add all seasonings and cook for another 5 minutes or until squash is tender but not mushy.
  3. Serve immediately!
