Fall is here! Sort of. We’re still having a few weird 70-80 degree days here in Colorado. The leaves all around Colorado are definitely in fall mode with vivid yellow, burnt oranges and reds scattered all over the place.

If I had to choose, pecans are probably my favorite type of nut. The texture is light and chewy but not too crunchy, so you can eat about a million before your jaw gets tired. (or maybe that’s just me…) Also, pecan pie, hello? A couple of years ago I went on a whirlwind trip to NYC in early December and my strongest memory is the smell of the roasting hazelnuts from the street vendors. It was humid and freezing outside, but the scent of these nuts just surrounds you and warms you up. There’s nothing better than the holidays in NYC, it was so magical that I love to reminisce about my trip even though I was only there for a grand total of 30 hours. These nuts give your house a warm, toasty feeling and if you’re throwing a party this holiday season, I recommend roasting these right before your guests come over and your house will smell divine!

Halloween is coming up quick and these nuts would be a perfect healthy snack option for a party or if you’re trying to fight off all of that colorful Halloween candy that is in your face at every single store you visit. Also, I think this recipe is a great way to get excited about football if you’re not already. You love pumpkin spiced everything, so whip these up and snack away!

Pumpkin Spice Almonds & Pecans

The perfect sweet, salty and crunchy fall inspired party or football snack!

Cook Time 1 hour
Total Time 1 hour 5 minutes
Servings 2 cups

Ingredients

  • 1/2 lb Pecans, raw & whole (about 1 heaping cup)
  • 1/2 lb Almonds, raw & whole (about 1 heaping cup)
  • 2 tablespoons Maple Syrup
  • 2 tablespoons Coconut oil melted
  • 1 tablespoon Pumpkin Pie Spice blend
  • 1/2 teaspoon Coarse sea salt

Instructions

  1. Preheat the oven to 250 degrees. Line a baking sheet with parchment paper.
  2. In a medium sized bowl add the nuts and maple syrup and stir to coat all the nuts. Next, do the same with the coconut oil.
  3. Add the pumpkin spice and salt and stir until the nuts are coated evenly with spices.
  4. Spread the nuts out evenly on your baking sheet. Bake for 1 hour or until the nuts are crunchy and browned. Depending on your oven it may take another 15 minutes, but make sure you don't burn them!
