We tied the knot in beautiful Genesee, Colorado at The Pines at Genesee on August 12, 2016 after being engaged for almost two years. It was just the right amount of time for an engagement to last, lots of time to plan every detail, over-analyze (I deserve a gold medal in this), change our minds a handful of times and finally settle on a perfect decision for every part of the day. Any longer and I think I would’ve gotten increasingly restless (crazy).

Genesee, CO was the perfect location in the mountains but only about 15 minutes from Golden, CO which is not far from Denver either. The venue itself was INCREDIBLE to work with (major shout out to Vivian and Regan!) and they made the whole process very easy. The venue owns their own caterer and has an open house every month where you can taste different parts of their menu and meet with a bunch of their preferred vendors, so you basically get to find all of your vendors at the same time!

On to the food- it was delicious!! Their main menu included different themes and at least a hundred appetizers based on what sort of vibe you want. During the cocktail hour between the ceremony and reception we had two different appetizers:

  • French fry bar- Regular, Sweet Potato and Curly with Ketchup, Ranch, Tri-Mustard sauces and seasoning shakers
  • Spinach and Artichoke Dip & gourmet crackers

To match the overall casual feeling of the wedding, we went with the Southwestern Buffet for the main meal:

  • Chicken fajita tacos with corn tortillas
  • Spanish Rice
  • Black beans
  • Tri-color chips and salsa
  • Southwestern salad and assorted fruit

One of the catering staff patiently walked through the whole buffet serving me, which was unexpected but a testament to their incredible customer service!

This option was great not only for myself, but also for other guests who were also gluten free, dairy free or vegetarian. Not to mention- who doesn’t love tacos?!

For everyone’s FAVORITE part- we did an assortment of flavors both mini and large sized cupcakes from Gigi’s cupcakes!

  • Wedding Cake (vanilla on vanilla)

  • Chocolate Chip Cookie Dough
  • Gluten Free Chocolate Peanut Butter

Wes doesn’t eat gluten free like I do, but for our cupcake cutting we shared the gluten free Peanut Butter cupcake!

I was quick to say dessert was the best part, but it possibly could’ve been the open bar! My husband is an avid home-brewer and he brewed three different styles of beer and one of our groomsmen brewed one also. Other than the home brews and signature cocktails we had an assortment of other wine, beer and liquor. Our venue didn’t have a liquor license so we ordered through a company that delivers called Applejack. I am hesitant to even link them here because our experience with them was terrible and I wouldn’t recommend them to anyone because of it. We finalized our order two weeks before the wedding and the DAY BEFORE at around 6PM they called me to tell me that they were out of the cucumber vodka and another plain vodka that we had ordered and were just going to take it off the order. After spending 20 minutes on hold with them (the morning of my wedding on the way to get my hair done), being hung up on and just given overall terrible service they finally subbed a different type of cucumber vodka which we obviously needed for our signature mojito. They handled the situation horribly and the fact that our order was finalized TWO WEEKS PRIOR only to be messed up the day before was ridiculous. They have a policy where you can return any unopened booze for money back but I didn’t even want to bother with them further. Instead, I will continue to drink our wedding booze for the next year! It actually works out perfectly because we always host Thanksgiving and multiple parties a year.

Home Brews:

  • Peach Blonde (gluten free!)
  • Vanilla Porter
  • Belgian Strong
  • Double IPA

Signature Cocktails:

  • Cucumber Mojito- cucumber vodka, simple syrup, club soda & fresh mint
  • Traditional Margarita- tequila, triple sec & lime juice

That completes all of the food aspects of the wedding! I couldn’t have been happier with the way it all turned out.
